Her publications have been cited by scholars in the fields of international criminal law, public international law, anthropology, and political science.

Dr Edelbi's current work focuses on the international criminal law order and the disciplinary role of the International Criminal Court (ICC) in Africa and other postcolonial regions and questions postcolonial state resistance. She is a contributor to the Feminist Judgments Project, co-authored by UNSW Scientia Professor Louise Chappell, Dr Rosemary Grey, Dr Kcasey McLoughlin and Suzanne Varrall. She earned her PhD from the University of NSW’s School of Global and Public Law. She earned her LLB from Macquarie University and her BA (History and Political Science) from the University of Sydney.

Dr Edelbi is an executive member of the African Studies Association of Australasia and the Pacific (AFSAAP) and a member of the Australian and New Zealand Society of International Law. Before joining academia, she worked as a legal researcher and advocacy officer with human rights organisations in Palestine and Belgium, supporting the rights of Palestinians and minorities in Iraq and Iran. She also has extensive legal professional experience working as a litigation solicitor at DLA Piper and Colin Biggers & Paisley. Souheir serves on the Advisory Committee of the Racial Justice Centre Ltd, an organisation engaged in developing anti-racism litigation strategies, legal professional education, and transformative legal reform in Australia.
