Biography

Dr Rosalie Durham has a strong background in food science and technology with a passion for teaching and cooking. She was Academic Course Advisor for the Nutrition and Food Science program for 13 years until her retirement in 2022; she is currently an Adjuct Fellow with the School of Science. Rosalie completed an undergraduate degree with Honours in Food Technology from UNSW and has worked in the food industry including Arnott’s Biscuits and Syrinx Research Institute. She completed an MSc Hons, before joining the University of Western Sydney in 1994 to work in collaboration with CSIRO to research whey process technologies with the support from Dairy Australia. This work led to the development and commercialization of a patented process for the purification of lactose from whey. Rosalie completed her PhD in 2000 and has won a number of awards, including AIFST Jack Kefford Award, Environmental Science Technology Award for Excellence at Knowledge Commercialisation Australasia and the 2005 DIAA Australian Dairy Innovation Award. She continues to research and teach in the areas of food processing particularly dairy and cereals, quality assurance and food safety, sustainable food manufacturing and by-product utilisation.
