A grazing operation is the core of the Hawkesbury Farm, with commercial cattle and sheep, and stud Angus and Limousin developing. The grazing operation demonstrates mainstream sustainability principles, including irrigation with recycled water, minimum tillage and application of composted poultry manure to enhance soil health, supporting a seasonal mixed pasture ecology of high performance grasses and legumes, and associated fodder conservation.

The stock are utilised by Animal Science students with an interest in learning to lead and show stock, with great success of both students and cattle at shows including Canberra, Camden, and Hawkesbury. As well as this, our Animal Science students have been mentoring younger Western students and have also participated in the Unischools Steer Challenge, whereby school students from over 15 regional schools learn to manage and show a steer prior to it going to market.
